discovered in 2737 B C by Chinese emperor Shen Nung who advocated boiling water for health reasons As the emperor was boiling a pot of water one day tea leaves drifted on the wind and landed in the water The ruler tasted it and the rest was history The Chinese had likely been tea drinkers long before this incident took place Regardless of its origins however for several centuries anyone drinking tea had to steep it the same way as Shen Nung using loose leaves Then around 1904 tea bags made their first known appearance A New York tea merchant named Thomas Sullivan devised tea bags more or less by accident Sullivan distributed samples of his tea in small silk bags and according to some accounts a restaurateur dunked one of these bags in hot water and tea history was again made The United States Patent Office has no record of Thomas Sullivan In 1921 a man named George H Peal was awarded a Canadian patent for a non refillable Tea Ball 8220 intended to contain just sufficient tea for a single brewing 8221 Eleven years after that discovery the first U S tea bag patent went to a New Yorker named Simon Cooper In the United Kingdom a veritable bastion of tea consumption tea bags were slow to catch on They were introduced in the mid 1930s but three decades later less than 10 of tea drinkers there used them By the end of the millennium that number had soared to 85 At that time in the United States 60 of tea was brewed using bags These days tea bags continue to be a quick and convenient method for preparing tea In recent years however as interest in high end premium and specialty tea had begun to grow loose leaf tea made something of a comeback A relatively recent development in tea technology features the convenience of a tea bag but allows drinkers to enjoy premium way shape or form There is no doubt that tea helps relieve anxieties but what if you want to really unwind Peppermint Herbal Organic Herbals would most certainly be the type to brew if you 8217 re looking for a warm beverage before bed or even just a mid day escape Now I m not going to pretend to be an herbalist but over the years I 8217 ve had more than my share of peppermint and chamomile tea Peppermint tea both soothes and serves as a breath freshener It is also known to relax parts of your throat and stomach In doing so it promotes burping and helps ease a tense or overfull stomach Despite its obvious health benefits I however just like it for the flavor 8212 especially when sweetened In brewing peppermint tea I like to use 2 teaspoons of tea for every 8 ounces of boiling water Steep for 5 7 minutes depending on your desired strength and then add 2 teaspoons of sugar It will taste fresh and cleansing and will be sweet enough to liven up your entire day Organic Nile Delta Chamomile Chamomile is my favorite herbal tea When I am having an awfully stressful day and I just want to cut loose and free my mind from those worries I turn to chamomile While I cannot guarantee the same results for you a cup or two of 8220 calm 8221 as I like to call it will set my mind straight and let me focus my attention on being productive rather than being a nervous wreck I normally do not sweeten my chamomile as I think it might detract from my purpose I recommend traditional herbal tea brewing for hot chamomile but I will share with you my favorite recipe for iced calm Iced Calm 4 6 teaspoons of Chamomile Tea 12 oz of boiling water Lots of ice Steep for 6 minutes To be able to steep 4 6 teaspoons at once you may need to use either a tea infuser or two to three tea balls And yes I do know it is a lot of tea Make this in a large glass or double the recipe for a medium sized pitcher My method is to brew and fill the glass with ice Once the ice melts add more ice repeating until it is sufficiently cool If the glass fills up keep in mind you may need an 18 20 oz glass for this pour some into another glass and keep adding ice Depending on the size of the glass it might take 3 4 repertoire Ever heard of an Earl Grey or Green tea Martini Change it up and give Kaluha and coffee liqueurs a break and go for the leaf I think teas and spirits are a perfect combination after all plant laced aperitifs are nothing new ever heard of Grappa or Vermouth You guessed it both made with herbs I know tea and spirits can seem almost counter intuitive but whoever ever believed that tomatoes and vodka would become such a hit OK you got me tomatoes are a fruit and not a plant but you get the picture Heck why not live a little and try your favorite teas and spirits and see if what you can come up with Earl Grey Martini 1 teaspoon Earl Grey tea leaves 2 1 5 fluid ounce jiggers gin White sugar for rimming glass 1 wedge lemon 1 1 5 fluid ounce jigger fresh lemon juice Chipped Ice 2 fluid ounces simple syrup Sprinkle the tea leaves over the gin in a small glass and set aside to steep for 2 hours Pour 1 4 to 1 2 inch of white sugar onto a small shallow plate Moisten the rims of 2 martini glasses with a wedge of lemon dip the moistened glasses into the sugar set aside Strain the infused gin lemon juice and simple syrup into a cocktail shaker over ice Cover and shake until the outside of the shaker has frosted Strain into the rimmed glasses to serve Enjoy Green Tea ini 4 oz Kettle One Citroen oz triple sec 1 oz chilled green tea Chipped Ice Splash of fresh lemon juice the exciting world of higher quality teas you will surely have heard frequent recommendations to avoid tea bags in favor of loose leaf teas This is sound advice and there are many reasons for it One of the most pragmatic and somewhat obvious reasons for this is a basic quality issue Generally if a tea is stuffed into tea bags and sold in a grocery store for less than three dollars a box it s unlikely to be a good tasting or fresh tea Soom Estate Loose Leaf Tea With the exception of a few types of recently designed roomier and more transparent bag types tea bags prevent seeing and smelling the quality of the tea and the tea used in mass market factory produced tea bags is the lowest quality you can find It is often called floor sweepings among people for whom these cheap teas are held in contempt Basically if you want to be able to evaluate the quality of the leaf you need to be able to see and smell it as well as taste what it brews into The Agony of the Leaves is the term used to indicate the unfurling of the tea leaf during steeping This can be quite a dramatic and beautiful stage in the brewing of tea and with some teas it is one that can be quite wonderful to watch if the the hot water limiting its potential for releasing flavor One thing you never want to subject a tea leaf to is constraining its expansion during brewing White Tea Loose Leaf Plus do you really want to drink an infusion of paper steel staple tea and ink I can 8217 t cite any scientific studies showing that these non tea elements have a significant effect on the taste of the tea but they certainly compromise the purity of the brew That said there are some companies that use unbleached paper or other safer materials and do not use staples but there are still materials mixed in with the tea that are not tea and they re pieces of stuff that I surely don t want it my tea cup While there are a few companies putting higher quality teas into tea bags that have been designed to allow for more room of Darjeeling actually come from Chinese hybrid seeds because Chinese seeds are more resistant to cold weather A Darjeeling Tea Garden There are over 100 gardens in Darjeeling which produce almost 17 000 tons of tea per year Most of these gardens are located around an altitude of 6 000 feet on sloping terrains that sometimes rise steadily at 45 degree angles At this height the plants grow in a cool misty climate that receives plenty of rainfall which the leaves need in order to generate their fantastic flavor Since the tea plants in Darjeeling stop growing and become dormant in the winter months there basically is one continuous harvesting season that produces four different kinds of Darjeelings The first flush consists of the first new shoots of spring This first flush is normally done in April and produces a greener muscatel flavor of tea The first flush is what gets all of the tea tasters flustered Because of the exquisite taste and quality this tea is treated like and even compared to wine and this flush can rake in some unbelievably high prices from competitive buyers at auctions In between Darjeelings are harvested in late April to early May These in betweeners make an astringent but rounded cup of tea The second flush is picked from late May to June and produces an amazing well rounded mature and fruity flavor of tea that is said to be less astringent and even better than the first flush Finally there are the A 1st Flush Darjeeling Tea Darjeeling autumnals This batch is harvested in October and November and produces a very dark leaf and a full bodied tea experienced great difficulty getting the Chinese plants to thrive but they persevered Their luck improved when they began growing a hybrid of Indian and Chinese tea plants The first Assam tea 350 pounds worth arrived in London in late 1838 That year saw the Chinese export 30 million pounds of tea to England By the early twentieth century India produced 350 million pounds of tea annually gallon of water 1 gallon tea jug 5 tablespoons of tea Add 5 tablespoons of tea to your jug Add cold water preferably filtered until full Let it sit in room temperature for 6 hours Strain cold brew tea Scotland came up with a blend he dubbed breakfast tea and which spread to England Other accounts say Richard Davis an English immigrant to New York City and owner of the Canton Tea company devised a black tea blend he dubbed English Breakfast Tea in 1843 8220 after experimenting on the various flavored teas he finally settled on congou as a base adding a trifle of flowery Pekoe and a particular chop of Pouchong which was then on the market 8221 Organic Irish Breakfast Tea As some of the greatest tea lovers in the world the Irish are particularly fond of black teas brewed strong and specifically black teas from India 8217 s Assam region It 8217 s not completely clear why this is so but the preference is reflected in Irish Breakfast Tea which tends to be heavily weighted toward
